@stevebosserman I use a cast iron pan, 8 minutes on medium heat on the stove, 4 minutes plus a smidge under the broiler set to low. The “smidge” phase is checking every 15 seconds to see if the color is just right. It is important not to multitask during this phase…
@cliffordbeshers OK, got it. Multitasking during the final broiler step would be risky. Maybe aluminum foil laid across the pan during the "smidge" phase would reduce the likelihood of burning but still give you the color you want. Looks tasty, nonetheless!
@stevebosserman Aluminum foil would block the broiler. Really, I just need to remember the excellent advice from Irma Rombauer: Stand facing the stove. If you think you can unload the dishwasher in the "smidge" interval, you are wrong.
