@gregmoore the process is similar but this recipe has a citrusy flavor that gravlax does not. Also uses brown sugar along with regular sugar. Now that I know how easy it is I will experiment with different recipes and length of cure. The recipe I shared yielded a minimaly salty cure.

@mbkriegh @gregmoore Save the sushi-grade fish for sushi -- the beauty of curing (and smoking) is that it improves fish that is not sushi-grade.
