A couple of days ago my breakfast frittata turned into a cooked-egg mess as I 'slid' it from the no longer non-stick (recommended) pan onto a plate.

I'm trying to move away from non-stick anyway and this was the final straw. A review I read included a recommendation for Ironclad from a restaurant where I've enjoyed the food:

Schnappa Rock Tutukaka chef Dean Thompson is also a cast-iron supporter. He recommends Ironclad.

And so it's come to pass that I now own 1 small and two tiny cast iron pans that will work on our induction cooktop. 🤞🏼

@Miraz +1 for cast iron. A flatiron griddle pan is the best for eggs, crepes, tortillas, etc. plus, my only bread recipe requires a dutch oven.

@Miraz How are those as far as weight goes? We use a Lodge pan every day but it’s pretty heavy. I’ve heard some other brands are much lighter.

@jabel My wife runs a small business rehabilitating old cast iron so I’ve handled a lot of it. The older stuff, e.g., Griswold, is indeed a lot lighter than modern Lodge.

@cjhubbs Ah, that’s good to know. I’ll keep an eye out for an old Griswold. We can use this one fine for now but I don’t imagine we can continue using it into our old age!

@todd There are times when it would be nice if her business involved products that were… lighter. But she enjoys it and is starting to pick up some steam in our area. Fun to see it work for her.
