@hawaiiboy One of the waitresses knows us well (>10 years) and helps pick sakes we each like. The Koshinohomare was new and unique in my experience. Too sweet for me (put was picked for my wife) but I enjoyed sneaking some tastes. Japanese people seem more attuned to subtle differences so I think managing a place that caters to Japanese would be challenging!
