Yes your pancake batter should use (plant) milk not water, and fried in butter not oil. With cinnamon in the batter.

@sander I agree entirely. Water in pancake or waffle batter is a missed opportunity. IF I ever use water - it’s tea. It’s been fun to play around with.

@BonnieRue I’m an outlier: I have nothing-but-sourdough pancake breakfasts every couple of days. Starter has been going for years, I feed it a quarter or half cup of flour + enough water daily, then use it directly to make pancakes without adding anything else. Served with olive oil + salt.

@ffmike That sounds like a pretty cozy routine. I have not tried alternative liquids in sourdough pancakes - the sourdough has such a robust flavor all its own.. but maybe I follow your lead and play around with it!
