Had a go at a new recipe today – jollof rice, working from this Kitchn recipe (external link). I did add chicken and chickpeas to make it an all-in-one meal, rather than having to cook a separate protein. Overall, it was DELICIOUS! @odd I have heard there are a lot of variations of jollof rice – it seems like every West African country has their own version of it! I'm sure they're all delicious 😋
