Grano arso is effectively smoked flour, although I don’t know whether they smoke the flour or scorch the grain, as history suggests. Either way it makes a beautifully dark loaf with a smoky aroma and sweetish crumb.

@jeremycherfas That sounds (and looks) good - going to have to find somewhere in the UK to buy the flour and try it. There’s certainly nowhere local to me 😞
@TheDimPause I seem to remember that Doves Farm does, or did, a smoked flour.
