@joshua great article. I’ve been running restaurants for 40 years. I had my own 40 seat cafe for 10 years in Hilo, Hawaii. We were open for lunch only. We did a Pre Fixe menu dinner once a month on a Sunday night so we could play - it sold out every time.

The economics worked. I sold it when I was just done.
