The most jarringly unrealistic thing about the Death Star for me is how its artificial gravity is applied inconsistently from inside to outside.

Inside, the floors are all perpendicular to the vertical axis. Gravity pulls to the "bottom" of the sphere.

Outside, gravity acts like any typical planet or moon, pulling toward the center of mass.
