@oboer331 Turned out really good. I tried bread flour which I normally don’t do here in Canada (our flour is pretty high protein in general). Couldn’t tell the difference.
@benjohnson I haven’t experimented enough to know if it makes a difference. I just follow whatever recipe I’m using and I get good results so I don’t mess with it. I find time, temp, and hydration are the main factors.
@benjohnson I almost exclusively make sourdough. The book Artisan Sourdough Made Simple by Emilie Raffa is filled with great recipes, including bagels and chocolate focaccia. It’s my go to, and I haven’t found any duds yet.
