@adders Lemon and sugar! That sounds really good. Confectioner's sugar, or the granulated kind? I grew up in rural New England, so our choices were butter and (real!) maple syrup. @miraz I do think it's a British vs US thing, or maybe even US / Canada? The idea that Canadians would put lemon on pancakes when they have maple syrup is quite shocking to me, though. Maybe @alexink can enlighten in regards to the Canada Question.

@adders As an expat Brit, firstly it would be lemon and sugar on pancakes. But, as my mother was a Scot, that would include butter, lemon and even spices too. But then again, yes, you guess, here in Canada the prvaling topping would, indeed, include maple syrup and or, maybe butter too. They also love cooked apple and warmed banana to go with themaple syrup.

@annahavron The way we learned it from my father's side of the family was to first put butter onto the hot cakes. Then in one spot, spoon on some clumps of dark brown sugar. Then carefully add lemon juice to the clumps just enough to melt them into a dark puddle of flavor. Then cut off that part of the cake(s) with the sweet puddle on top. Insert in mouth to experience real ecstasy, not the artificial MDMA variety. Don't overdo it, you want it to be special, so just a few bites. You can finish up much of the cakes with butter with maple syrup.
