@dejus I’m enjoying the process so far. Have you found a trick for getting more air/holes inside? My first bake was tasty but denser than the pretty photos I see online.

@Cheri I'm no expert, but perhaps the sourdough starter wasn't fully ripe? Drop a little in a glass of water; if it floats, it's ready.

@dejus it is, I hadn't done it before, I was a chef early in my career, but never a baker. Now I have very solid starter that I keep in the refrigerator and feed weekly.
