Windows 10 is a-okay. I imagine they're doing some sort of fingerprinting, even with Secure Boot disabled.
@eli Ah, I'm guessing the issue is the T2 chip creates a fictional internal drive; the flash storage is actually a RAID. If that's the issue, booting to Linux off an external drive may be possible.
@Bruce it is certainly interesting -- luckily for me I don't boot linux off of Apple hardware, but I do have a machine that I used to run as a Hackintosh. I think it is an interesting space, but it feels like one which may be evaporating within the next decade or so as they phase out computers without the T chips in them.
