Breakfast turned out to be an unmitigated disaster. First, the back story. We’re trying to cook more, because the diet recommendations from John’s doctor lean towards the Mediterranean diet. This means good food, but it also means very much less processed stuff, which means more cooking... www.arush.io

@arush I have relied on the spray olive oil from Trader Joe's for this purpose. You can use very little easily. I usually sauté spinach quickly then add the beaten eggs . It's really good, if you like spinach.

@arush Scrambled eggs are not that easy. If you’re willing to be odd (and have a colander), try this quite simple poached scrambled egg recipe. Is it crazy to make scrambled eggs in boiling water? Maybe, but it works.

@arush You don't need a very hot pan. Pre-heating one at medium-low is plenty. I add my eggs to the pan, give them a quick scramble, then turn off the heat -- that way it's basically impossible to burn them. Some people even recommend starting with the eggs in a cold pan, then turning on the heat, but I find this takes a bit too much time and attention.
