@christopherchelpka The bones are a benefit! Otherwise you're throwing away a lot of turkey soup. But how to price them independently of the meat would be an interesting question.

@christopherchelpka You put them in a big pot with a lot of water and boil them for a long time. Pour through a colander to remove the bones, add your soup vegetables. cook some more. That's about it. Seasonings, amount of salt, choice of vegetables etc. are all up to you. The bones release a lot of collagen, which means the broth will turn into a gel when you refrigerate it. The "Paleo" people think this is really good, for some reason.
